Healthy Instant Pot Vegetable Beef Soup
This recipe won’t provide you with a run-of-the-mill beef soup. In fact, this recipe calls for sirloin steak cut into small cubes. The goal is to get the meat to come out tender and use meat that can absorb the juices and flavors easily.
We will also be using sweet potatoes as well to add some starch to the dish. Of course, you want it to be flavorful as well, so you will need things like onions, diced tomatoes, bay leaves, basil, and garlic powder to lend a hand.

how to make Vegetable Beef Soup
Prep all the veggies and the beef. Set your Instant Pot to sauté and add the avocado oil.
Add the beef cubes and brown on all sides, about 5 minutes.
Add the onions, and celery and cook for another 3 minutes. Turn the Instant Pot to “off”.
Add all the remaining ingredients. Place and lock the lid on the Instant Pot. Make sure the pot is “sealed”. Set the manual time for 10 minutes.
Once the time is up, do a quick release of the Instant Pot. Remove the bay leaves and serve.

Ingredients
- 1 tbsp avocado oil
- 2 lbs. sirloin steak cut into small cubes
- 2 small sweet potatoes cut into cubes or diced
- 1 cup red onion, diced
- 1 to 1 ½ cups celery, sliced
- 2 14.5 oz cans of diced tomatoes (no salt)
- 4 cups beef stock or approx. (1 carton)
- 2 bay leaves
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried parsley
- 1 tsp dried basil
- ½ tsp garlic powder
- 1 tsp dried oregano
Instructions
