Healthy Instant Pot Chicken and Veggies Soup Ingredients
A soup requires quite a few ingredients, mostly herbs and veggies to get that healthy, delicious flavor. This Instant Pot soup recipe is no different. You will need avocado oil to sauté the veggies at first. The star of the dish will be the chicken. You will need to use boneless, skinless chicken breast so that it is easy to shred.
Chicken broth will help create the soup and add flavor. However, you will want to use garlic, lemon juice, bay leaves, dried thyme, smoked paprika, salt, and pepper to create the most flavorful soup ever. The veggies are up to you; however, we use carrots, celery, and onions in this recipe.
Directions
Place your Instant Pot on the sauté setting and sauté the onion, celery, garlic, and carrots for about 5 minutes in the avocado oil.
Add all the remaining ingredients, except for the zucchini noodles. Seal and set for 20 minutes. Chicken should be tender and fall apart easily with a fork when it is done.
Prepare your zucchini noodles. You may need to sauté the zucchini noodles for a few minutes in a medium pan with a little water to soften them to your taste.
Remove the cooked chicken from the instant Pot and place in a large bowl. Shred the chicken with 2 forks and place back into the soup.
Place zucchini noodles in each serving bowl and spoon soup over the noodles when you are ready to serve.
Top with green onions or parsley, or both!

Ingredients
2 Tbsp Avocado Oil
4 or 5 Boneless, Skinless Chicken Breasts
4 Cups Chicken Broth
3 Carrots, Cut into Rounds
3 Celery Stalks, Sliced
2/3 Cup Onion, Chopped
2 Cloves Garlic, Minced
4 Cups Zucchini Noodles, Store bought, or you can spiralize 2-3 zucchini
1 Lemon, Juiced
2 Bay Leaves
1 Tsp Dried Thyme
1/2 Tsp Smoked Paprika
2 Tsp Black Pepper
2 Tsp Salt
Sliced Green Onion and Fresh Parsley for Serving (optional)
