This is why we have the meme of making Thanksgiving dinner sandwiches. These sandwiches utilize every dish we had on Thanksgiving and are delicious. But they get old quickly, and turkey won’t last forever in the fridge.

Why turkey and noodles? Well, the turkey is a mainstay, we need to finish that meat off so nothing goes to waste. But the noodles have nothing to do with Thanksgiving, and that’s the point.
The meal itself was a good one, but we want to be done with it come November 26th. Adding noodles gives the turkey a whole new look, texture, and flavor. It is almost like you made it with raw turkey and not leftovers, like it was made intentionally.
Plus, the noodles make for a good carb in the dish. Of course, noodles are how we made this recipe, but it isn’t the only option.
Easy Leftover Turkey and Stuffing Recipe
The classic way to make a leftover turkey casserole dish is to use stuffing. You can easily replace the noodles in this dish for stuffing; essentially swapping out the carbs. Of course, you must have enough leftover stuffing to make this work.
The recipe calls for 2 cups of pasta for a unique Thanksgiving casserole recipe. You will need a bit more stuffing to make this work. The goal is to have the carbs absorb enough moisture so that the sauce is thick and not watery.
Start by adding 2 cups of stuffing and mixing it well. Add more and more stuffing until you are satisfied with the consistency of the casserole dish.
Leftover Casserole Ingredients
We already have some of the ingredients we will need for this easy leftover turkey and noodles recipe. You will want to make sure your turkey leftovers are frozen. This will help ensure the crockpot doesn’t overcook the already-cooked turkey.
Did you happen to have an extra can of mushroom soup from the green bean casserole leftover? We will use that soup and a splash of milk, some frozen veggies, chicken stock, and uncooked pasta (or cooked stuffing).

Toss the frozen turkey, wet ingredients, and seasoning into the crockpot.
Cover and cook on low for 6-8 hours.
An hour before serving, add in the frozen vegetables, uncooked pasta, and chicken broth. Stir, cover, and continue to cook.
Top it off with shredded cheddar cheese, and then serve and enjoy!

Splash of Milk (Whatever kind you prefer)
1 Cup Frozen Vegetables
1 Tbsp Onion Powder
1/2 tsp Garlic Powder
1/4 tsp Black Pepper
1 tsp Poultry Seasoning
2 Cups of Uncooked Pasta (or Leftover Stuffing)
2 Cups of Chicken Stock
Shredded Cheddar to Taste
- Toss the frozen turkey, wet ingredients, and seasoning into the crockpot.
