Healthy Instant Pot Teriyaki Chicken

One of my favorite kitchen helpers is the Instant Pot. An Instant Pot is not only easy to use but can also help you prepare a healthy, perfectly cooked meal in less time and with less than half the dishes to clean up. Take this Instant Pot teriyaki chicken recipe, for example.

Of course, we all prefer healthy and homemade meals for ourselves and our families. Apart from the occasional take-out day, we know eating healthy is an important component of overall health.

It’s worth the time to make a healthy meal, but do we always have the time? Teriyaki chicken is delicious, but it is an even better chicken recipe when you use an Instant Pot teriyaki chicken recipe.

With super tender bit of white meat chicken and a savory teriyaki sauce that you prepare in minutes with fresh ingredients, you may want to cancel your take-out order.

It’s ready in about the same amount of time as it takes you to order and wait for the doorbell. The best part is that you know what is in the meal. There are no hidden fake sweeteners or unhealthy oils, and you control the seasonings. It’s so easy, too.

In fact, this is a great recipe for Instant Pot beginners as well as veteran cooks.

Healthy Instant Pot Teriyaki Chicken | Ingredients

The first ingredient is the chicken. This recipe calls for boneless, skinless chicken breasts. We can also make a choice with the flavoring. Instead of using teriyaki sauce, which could be filled with sugars we want to avoid that as much as possible.

Instead, we will use soy sauce or coconut aminos, rice vinegar, garlic, ginger, and sesame oil to get the flavor we want. Together, these things will taste just like teriyaki sauce without the added stuff that is unhealthy.

How to Make Instant Pot Teriyaki Chicken

Add the coconut aminos, vinegar, garlic, ginger, and oil to the Instant Pot.  Add the honey if you choose currently also.  Whisk the ingredients together. 

Place the chicken breasts into the sauce.

Close and seal the Instant Pot lid. Set to cook on high pressure for 10 minutes. Once the cooking cycle is done, let the Instant Pot naturally release for 5 minutes. Then, turn the Instant Pot off and release the remaining pressure. 

Carefully remove the lid and transfer the chicken to a cutting board. Let the chicken cool slightly before slicing it into strips.

Turn your Instant Pot to sauté and add the arrowroot powder to the sauce. Stir constantly for a few minutes until the sauce has thickened. Turn the Instant Pot off. 

Add the chicken back to the sauce and stir to coat each piece.

Serve over rice, cauliflower rice or mixed greens with a side of veggies for a delicious, healthy meal.

Ingredients

  • 2 lbs. Boneless, Skinless Chicken Breast
  • ⅔ Cup Soy Sauce or Coconut Aminos
  • 3 Tbsp Rice Vinegar
  • 2 Garlic Cloves, Minced
  • 2 tsp Minced Ginger or 1 Drop of Ginger Essential Oil
  • ½ Tbsp Sesame Oil
  • 2 tsp Arrowroot Powder or Cornstarch (Optional thickening agent)
  • 2 Tbsp Honey (Optional for sweetness)

Instructions

  • Add the coconut aminos, vinegar, garlic, ginger, and oil to the Instant Pot. Add the honey if you choose currently also. Whisk the ingredients together.
  • Place the chicken breasts into the sauce.
