Pour organic chicken stock into a slow cooker and also add uncooked chicken breast.
Sauté onions, garlic & jalapeño in olive oil in a pan on the stovetop and then add to crockpot.
Add Rotel, diced & fire-roasted tomatoes, black beans & corn & bell pepper to crockpot.
Add spices which include ground cumin, chili powder & paprika. (salt & pepper to taste)
Cook on low for 6 hrs.
Shred chicken and add back to the crockpot in addition to cilantro.
Serve with tortilla strips and sliced avocado.

4 Cups Chicken Stalk
1 1/2 Lbs Boneless Skinless Chicken Breast
1 Tbsp Olive Oil

3 Garlic Cloves
1, 14Oz Organic Diced & Fire Roasted Tomatoes with Green Chilis
1 Can Rotel with Diced Tomatoes & Green Chilis
1, 15 Oz Can Organic Black Beans (Drained & Rinsed)
1 1/2 Cups Frozen Corn
1 Red Bell Pepper (Chopped)
2 Tsp Ground Cumin
2 Tsp Chili Powder
3/4 Tsp Paprika
Salt & Pepper to Taste
1/2 Cup Cilantro
1, 14 Oz Bag of Tri-Colored Tortilla Strips
