Ingredients

  • 4 Cups Chicken Stalk
  • 1 1/2 Lbs Boneless Skinless Chicken Breast
  • 1 Tbsp Olive Oil
  • 1 Onion, Chopped
  • 3 Garlic Cloves
  • 1 Jalapeno
  • 1, 14Oz Organic Diced u0026 Fire Roasted Tomatoes with Green Chilis
  • 1 Can Rotel with Diced Tomatoes u0026 Green Chilis
  • 1, 15 Oz Can Organic Black Beans (Drained u0026 Rinsed)
  • 1 1/2 Cups Frozen Corn
  • 1 Red Bell Pepper (Chopped)
  • 2 Tsp Ground Cumin
  • 2 Tsp Chili Powder
  • 3/4 Tsp Paprika
  • Salt u0026 Pepper to Taste
  • 1/2 Cup Cilantro
  • 2 Acocados
  • 1, 14 Oz Bag of Tri-Colored Tortilla Strips

Instructions

  • Pour organic chicken stock into a slow cooker and also add uncooked chicken breast.
  • Sauté onions, garlic u0026 jalapeño in olive oil in a pan on the stove top and then add to crockpot.
  • Add Rotel, diced u0026 fire roasted tomatoes, black beans u0026 corn u0026 bell pepper to crock pot.
  • Add spices which include ground cumin, chili powder u0026 paprika. (salt u0026 pepper to taste)
  • Cook on low for 6 hrs.
  • Shred chicken and add back to crockpot in addition to cilantro.
  • Serve with tortilla strips and sliced avacado.
