- 4 Cups Chicken Stalk
- 1 1/2 Lbs Boneless Skinless Chicken Breast
- 1 Tbsp Olive Oil
- 1 Onion, Chopped
- 3 Garlic Cloves
- 1 Jalapeno
- 1, 14Oz Organic Diced u0026 Fire Roasted Tomatoes with Green Chilis
- 1 Can Rotel with Diced Tomatoes u0026 Green Chilis
- 1, 15 Oz Can Organic Black Beans (Drained u0026 Rinsed)
- 1 1/2 Cups Frozen Corn
- 1 Red Bell Pepper (Chopped)
- 2 Tsp Ground Cumin
- 2 Tsp Chili Powder
- 3/4 Tsp Paprika
- Salt u0026 Pepper to Taste
- 1/2 Cup Cilantro
- 2 Acocados
- 1, 14 Oz Bag of Tri-Colored Tortilla Strips
Pour organic chicken stock into a slow cooker and also add uncooked chicken breast.
Sauté onions, garlic u0026 jalapeño in olive oil in a pan on the stove top and then add to crockpot.
Add Rotel, diced u0026 fire roasted tomatoes, black beans u0026 corn u0026 bell pepper to crock pot.
Add spices which include ground cumin, chili powder u0026 paprika. (salt u0026 pepper to taste)
Cook on low for 6 hrs.
Shred chicken and add back to crockpot in addition to cilantro.
Serve with tortilla strips and sliced avacado.
