Salsa is all about the tomatoes. Tomatoes act as the base, give it the color, and of course, add that acidity we all love. In fact, there are a couple of different tomatoes we will be using.

You will need a can of diced fire-roasted tomatoes with green chilis. But you will also need large, organic heirloom tomatoes that you can chop yourself. The jalapenos are also important.

Jalapenos will add a bit of flavor and heat but here is a tip. You will want to remove the seeds if you want a medium salsa. The more jalapeno seeds in the salsa, the hotter it will be.

Of course, there will also be a little chili powder, so that will add heat as well. Balance it out until you know you have an acceptable heat. You can easily change the heat, that’s what makes a homemade slow cooker salsa such a good idea.

You can adjust the heat as you see fit. Want it to be spicier? Add more jalapeno. Want it to be less spicy? Lower the number of jalapenos you use. Just remember, one won’t make it too spicy, and it is necessary for flavor.
