You will obviously need a whole chicken. Some whole chickens you buy come with the giblets and some don’t. You could absolutely get one with the giblets intact, remove them and use them for other recipes if you’d like. But you don’t need the giblets for this recipe.

You just need the chicken, some chicken broth, garlic, olive oil, and then salt and pepper. That is all it takes to get amazing results. You can use the giblets to make a chicken stock or a gravy. Just make sure not to use the liver if you do, the stock will have a bitter flavor.

Directions
Remove giblets from chicken if present.
Turn on the “brown/sauté” feature on your instant pot.
In a small bowl mix garlic cloves, garlic powder, olive oil, salt & Pepper.
Rub seasoning all over the chicken on both sides.

Lay chicken in a preheated instant pot breast side down for 4-5 minutes to sauté and brown the skin.
Carefully flip the chicken to the other side and sauté for another 4-5 minutes.
Remove chicken from the instant pot and place on a platter.
Add two cups of chicken broth to the instant pot. Lay trivet in the bottom of the pot and place chicken breast side up.

Place the lid on the instant pot and securely lock.
Set the time for the appropriate time for your size of chicken. Approximately 6 minutes for every pound.
Once the cooking time is up allow the instant pot to naturally release for 15 minutes or longer if you would like. Then manually release the pressure valve.
The chicken will be very tender so carefully remove and place in a bowl or on a platter.
