Easy Crockpot Beef with Brown Rice and Vegetables
The obvious ingredient here is beef, ground beef, to be exact. However, you can choose any type of beef really. You could use strips of steak, sirloins, ground beef, or even chuck if you really wanted to.
The choice is yours, though you may need to alter the directions a bit if you go too far off-script. You will also need a couple of jars of basil tomato sauce, brown rice, and then the veggies.
Fresh is always best with veggies, but no one will judge you if you go with frozen veggies. You will need red and yellow bell peppers and Roma tomatoes.
Crockpot Beef with Brown Rice Recipe
Pour one tablespoon of olive oil into a sauté pan and brown the meat thoroughly. I used my slow cooker that browns as well to cook the meat and then transitioned to slow cooking.
Add salt, pepper, and Allspice to the meat as you cook.
Slice peppers into half-inch-wide strips.
When thoroughly cooked, transfer to a slow cooker and add two jars of Bertolli Basil and Tomato pasta sauce, peppers, and one can of diced tomatoes. Cook on low for two hours.
Cook brown rice according to directions.
Serve beef mixture over rice and top with parmesan cheese.

Ingredients
- 2 Lbs Ground Beef or Sirloin
- 2 Jars Basil and Tomato Pasta Sauce
- 2 Cups Brown Rice
- 1 Red Bell Pepper, Sliced into strips
- 1 Yellow Bell Pepper, Sliced into strips
- 4 Roma Tomatoes, Chopped
- 1/4 Tsp Pepper
- 1 Tsp Allspice
- 1 Tbsp Olive Oil
- Salt, To taste
- Pepper, To taste
- Parmesan Cheese, For topping
Instructions
