Ingredients
- 2 Lbs Boneless Skinless Chicken Breast
- 2 cups Chicken Bone Broth
- 1-16 Oz Bag Frozen Corn
- 1-15 Oz Can of Black Beans (Drained)
- 1-15 Oz Can Diced Tomatoes
- 1 Cup Salsa
- 3 Tsp Cumin
- Salt and Pepper to Taste
- 2 cups white rice
Instructions
- Mix all ingredients in the crock pot except the chicken and rice. Mix together.
- Place chicken breast in the crock pot and cover with mixture.
- Cover and cook on high for 4 hours.
- Add rice when there are 2 hours left in the cooking time and gently stir ingredients.
- When chicken is fully cooked, shred or dice the chicken.
- Add shredded chicken to the crock pot and mix ingredients before serving with nachos, tacos, or a taco salad.
