Salsa Chicken and Rice Crock Pot Recipe
This salsa chicken and rice crock pot recipe is a super easy Mexican-inspired weeknight meal that works for easy weeknight meals or meal prep lunches.

- 2 Lbs Boneless Skinless Chicken Breast
- 2 cups Chicken Bone Broth
- 1-16 Oz Bag Frozen Corn
- 1-15 Oz Can of Black Beans (Drained)
- 1-15 Oz Can Diced Tomatoes
- 1 Cup Salsa
- 3 Tsp Cumin
- Salt and Pepper to Taste
- 2 cups white rice
Mix all ingredients in the crock pot except the chicken and rice. Mix together.
Place chicken breast in the crock pot and cover with mixture.
Cover and cook on high for 4 hours.
Add rice when there are 2 hours left in the cooking time and gently stir ingredients.
When chicken is fully cooked, shred or dice the chicken.
Add shredded chicken to the crock pot and mix ingredients before serving with nachos, tacos, or a taco salad.
