Salsa Chicken and Rice Crock Pot Recipe

This salsa chicken and rice crock pot recipe is a super easy Mexican-inspired weeknight meal that works for easy weeknight meals or meal prep lunches.

Ingredients

  • 2 Lbs Boneless Skinless Chicken Breast
  • 2 cups Chicken Bone Broth
  • 1-16 Oz Bag Frozen Corn
  • 1-15 Oz Can of Black Beans (Drained)
  • 1-15 Oz Can Diced Tomatoes
  • 1 Cup Salsa
  • 3 Tsp Cumin
  • Salt and Pepper to Taste
  • 2 cups white rice

Instructions

  • Mix all ingredients in the crock pot except the chicken and rice. Mix together.
  • Place chicken breast in the crock pot and cover with mixture.
  • Cover and cook on high for 4 hours.
  • Add rice when there are 2 hours left in the cooking time and gently stir ingredients.
  • When chicken is fully cooked, shred or dice the chicken.
  • Add shredded chicken to the crock pot and mix ingredients before serving with nachos, tacos, or a taco salad.
