How to make Crockpot Chicken Tortilla Soup
Pour organic chicken stock into a slow cooker and also add uncooked chicken breast.
Sauté onions, garlic & jalapeño in olive oil in a pan on the stovetop and then add to crockpot.
Add Rotel, diced & fire-roasted tomatoes, black beans & corn & bell pepper to crockpot.
Add spices which include ground cumin, chili powder & paprika. (salt & pepper to taste)
Cook on low for 6 hrs.
Shred chicken and add back to the crockpot in addition to cilantro.
Serve with tortilla strips and sliced avocado.

- 4 Cups Chicken Stalk
- 1 1/2 Lbs Boneless Skinless Chicken Breast
- 1 Tbsp Olive Oil
- 1 Onion, Chopped
- 3 Garlic Cloves
- 1 Jalapeno
- 1, 14Oz Organic Diced u0026 Fire Roasted Tomatoes with Green Chilis
- 1 Can Rotel with Diced Tomatoes u0026 Green Chilis
- 1, 15 Oz Can Organic Black Beans (Drained u0026 Rinsed)
- 1 1/2 Cups Frozen Corn
- 1 Red Bell Pepper (Chopped)
- 2 Tsp Ground Cumin
- 2 Tsp Chili Powder
- 3/4 Tsp Paprika
- Salt u0026 Pepper to Taste
- 1/2 Cup Cilantro
- 2 Acocados
- 1, 14 Oz Bag of Tri-Colored Tortilla Strips
Instructions
