Mashed potatoes are a universally favorite side dish. They are creamy, comforting and go with just about anything. But a low carb diet means no potatoes. Luckily, there is another option; cauliflower. There is nothing easier and more delicious than Instant Pot mashed cauliflower as the perfect low carb side dish for lunch or dinner.

Your Instant Pot makes this dish so easy to prepare. Saute the garlic right in the pot. Then using the trivet or a steam basket, steam the cauliflower. If you have a hand blender, then you can even complete the dish in one pot! If not, a countertop blender or food processor does the job just as well.
We suggest just a simple garnish of chopped chives, but this dish really lends itself to many different flavors. If you want heat, try a dash of your favorite hot sauce! If you like a little texture, toss in some bacon bits or shredded cheese. Even keeping things low carb your options are plentiful.

Instant Pot Mashed Cauliflower Recipe Ingredients
Making mashed cauliflower is a lot like making mashed potatoes. The first step is seasoning the Instant Pot and the water with things like garlic and bone broth.
Then, you let the cauliflower cook until it’s nice and soft and ready to be mashed. You can add other things like butter, sour cream, salt, and pepper during the mashing process. It is quite easy to make and very delicious.
Directions
Set Instant Pot to the saute function and heat the oil. Then add the garlic and saute until tender, about 3 minutes.
Stir in the chicken bone broth and turn off the saute function.
Add the cauliflower pieces using a steam basket or the trivet.
Lock the lid and set cook time to 3 minutes. When cooking is complete, do a quick release of the steam, then carefully remove the lid as well as the basket or trivet. We suggest using tongs and an oven mitt to remove anything from a hot Instant Pot.
Using a hand blender directly in the Instant Pot, or a countertop blender, combine the cooked cauliflower, butter, sour cream, and salt and pepper. Then blend until creamy.

1 Large Head of Cauliflower, Separated into Florets or Roughly Chopped
1 Tbs Oil
3/4 Cup Chicken Bone Broth
1 Tbs Butter
1 Tbs Sour Cream
1/3 Cup Chives, Finely Chopped
Salt and Pepper to Taste
Directions
