The beef roast was slow-cooked with veggies to help make it more tender. Of course, the Great Depression made it a super popular dish in the US, as it was cheap and hearty. There are so many different versions of slow-roasted beef, but the one we think of in America is basically a Yankee Pot Roast.

The Yankee Roast version calls for searing the meat before slow cooking it in liquid and veggies. Our recipe is more like a Yankee Roast, but with a crockpot, so we don’t have to watch it roast.

  • Trader Joe’s Cabernet Beef Pot Roast – This beef roast is already braised and marinated in a beautiful red wine sauce. It is worth getting so you don’t have to worry about the prep time.
  • Potatoes – This crockpot beef pot roast recipe needs cubed potatoes. This is going to be the most challenging part of the recipe.
  • Carrots – Bonus points will go to someone who peels and cuts their own carrots for freshness. Otherwise, just make sure they are peeled and cut into pieces when you buy them.
  • Water – we want to keep some of the juices from the pan when we sear the meat. However, that is for flavor; this water is for tenderness.

Easy Crockpot Beef Pot Roast Recipe

Heat 2 teaspoons olive oil in a skillet over medium-high heat, then add the roast. Make sure to brown the meat on all sides. To get the meat browned on all sides, you’ll need to turn it every few minutes.

Once browned, place the roast in a crockpot. Add ½ cup of water to the crock pot along with the cubed vegetables. If you’d like, you can completely exclude the vegetables.

Cover the crock pot and cook on high for 3-4 hours. If you need to cook it for longer while you go to work or get other things done, you can cook on low for 6-8 hours.

Once the time is up, check the crock pot roast’s internal temperature. The roast should be at 145 degrees Fahrenheit.

Let the roast rest for 10 minutes before carving and then serving. Talk about an easy crock pot beef roast!
