1 Tbsp Olive Oil
1 Lb. Ground Turkey
1 Yellow Onion, Diced
3 Organic Celery Stalks
1/2 or Whole Green Pepper, Chopped
1/2 or Whole Red Pepper, Chopped
1 Cup Corn
1 Can Kidney Beans, Rinsed u0026 drained
1 Can Navy Beans, Rinsed u0026 drained
1 Can Chili Beans Pinto, Rinsed u0026 drained
1 Can Diced Tomatoes
4 Cloves Garlic, Minced
2 Tbsp Chili Powder
1 tsp Cumin
1 tsp Paprika
1 tsp Coriander
Salt u0026 Pepper
1 1/2 Cup Beef Broth
Topping Options
Avocado
Shredded Cheese
Green Onions, Chopped
Cilantro
Salsa
Tortilla Chips
Instructions
Heat olive oil med-high heat. Add ground Turkey and season with salt and pepper. Add chopped onion and cook until Turkey is lightly browned.
Add Turkey to crockpot along with the rest of the ingredients (minus the toppings).
Cook on high for 3 hours and low for 6 hours.
Serve in large bowls with toppings.
Refrigerate for up to 5 days.
