Crockpot Turkey Chili with Pinto Beans

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Lb. Ground Turkey
  • 1 Yellow Onion, Diced
  • 3 Organic Celery Stalks
  • 1/2 or Whole Green Pepper, Chopped
  • 1/2 or Whole Red Pepper, Chopped
  • 1 Cup Corn
  • 1 Can Kidney Beans, Rinsed u0026 drained
  • 1 Can Navy Beans, Rinsed u0026 drained
  • 1 Can Chili Beans Pinto, Rinsed u0026 drained
  • 1 Can Diced Tomatoes
  • 4 Cloves Garlic, Minced
  • 2 Tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Coriander
  • Salt u0026 Pepper
  • 1 1/2 Cup Beef Broth

Topping Options

  • Avocado
  • Shredded Cheese
  • Green Onions, Chopped
  • Cilantro
  • Salsa
  • Tortilla Chips

Instructions

  • Heat olive oil med-high heat. Add ground Turkey and season with salt and pepper. Add chopped onion and cook until Turkey is lightly browned.
  • Add Turkey to crockpot along with the rest of the ingredients (minus the toppings).
  • Cook on high for 3 hours and low for 6 hours.
  • Serve in large bowls with toppings.
  • Refrigerate for up to 5 days.
