Ingredients

  • 1 Tbsp Coarse Salt
  • 1/2 Tbsp Pepper or to Taste
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 Tbsp Cocoa Powder
  • 1/4 Cup Light Brown Sugar
  • 2 Lbs Baby Back Ribs
  • 4-5 Potatoes Medium Sized
  • 1 Bottle BBQ Sauce (Pick Your Favorite)

Instructions

  • Combine the dry rub ingredients in a medium bowl. Rub to cover both sides of the ribs. You can save any leftover rub in an airtight container.
  • Heat a large skillet or grill pan and quickly sear both sides of the ribs for about 2-3 minutes per side until the rub forms a light crust.
  • Place the potatoes in the bottom of the Crockpot. Line the ribs along the outside of the Crockpot, around the potatoes.
  • Pour your bottle of barbecue sauce over the ribs, in the Crockpot. Be sure to pour sauce down both sides.
  • Cook on low for 8-10 hours.
  • Once the Crockpot is done, place the ribs and potatoes onto a cooking sheet. Brush the ribs and potatoes with some of the sauce from the Crockpot.
  • Set the oven to broil and place the ribs and potatoes in the oven for 3-5 minutes until the sauce is nicely caramelized.
