Easy Crockpot Beef Barbacoa

Ingredients

  • 3 Lbs Beef Chuck Roast, Cut into Cubes
  • 1 Cup Onion, Diced
  • 2 Tbsp. Garlic, Diced fine (2-4 Cloves)
  • 1/2 Cup Beef Broth
  • 1/4 Cup Fresh Lime Juice (About 2 Limes)
  • 2 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Cumin
  • 3 Chipotle Chiles in Adobo Sauce, Chopped Small, with Some of the Sauce
  • 1 Tsp. Oregano
  • 2 Tsp. Salt
  • Pepper to Taste
  • Oil or Butter for Browning

Instructions

  • Sprinkle the beef with salt and pepper and set aside.
  • Add the remaining ingredients to a food processor or into a small bowl to blend with a stick blender. Blend until all the ingredients are incorporated. Set aside.
  • Heat the oil in a large skillet over medium-high heat and add the beef. Brown on both sides, about 2-3 minutes per side. When you are browning the second side, add the onions to the pan and let them cook slightly.
  • Add the beef to your Crock Pot, then pour the sauce over the top. Secure the Crock Pot lid and cook for 4-6 hours on high or 8-10 hours on low.
  • When beef is done, use two forks to shred it and it’s ready to serve.
