Easy Chicken Tacos in the Slow Cooker

Ingredients

  • 2 Lbs Boneless, Skinless Chicken Breast
  • 2 Cups Chicken Bone Broth
  • 1 16oz Bag of Frozen Corn
  • 1 15oz Can of Black beans Drained and Rinsed
  • 1 15oz Can of Diced Tomatoes
  • 1 Cup Salsa
  • 3 tsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Ground Cilantro
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Pepper
  • 2 Cups White Rice

Instructions

  • Add all of the ingredients to your slow cooker except for the chicken and the rice. Whisk together until seasonings are mixed well into the chicken broth.
  • Add the chicken breast to the slow cooker, cover, and cook on high for 4 hours.
  • Add the rice for the last 2 hours of cooking time.
  • Remove the chicken breasts and shred them on a plate before adding them to the slow cooker.
  • Mix the ingredients together and serve on tortillas with your favorite toppings.
