Crockpot Pork Chops with Cream of Mushroom Soup Recipe

- 4 Bone in Thick-Cut Pork Chops
- 1 1/2 Tbsp Olive Oil
- 1/2 tsp Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 Container Sliced or Whole Organic Cremini Mushrooms
- 1 Can Cream of Mushroom Soup
- 1 Can Cream of Chicken Soup
- 1 Cup Organic Beef Broth
- 1 Tbsp Dried Parsley
- 1/2 Large Onion or 1 Small Onion (cut in quarters or diced. I like the flavor of onion but not eating them so I did large chunks)
- 2 Lbs Baby Red u0026 Golden Mixed Potatoes (cut in half)
Preheat olive oil in Cast Iron pan or large fry pan over medium to high heat. Season both sides of the pork chops with salt u0026 pepper, paprika, onion u0026 garlic powder. Place the pork chops in pan and brown (sear) on both sides. About 3 to 4 minutes on each side.
Remove pork chops from pan and set aside and turn heat to low/medium
Add beef broth, both soups to pan and whisk to release any brown bits from the bottom of the pan. Add dried parsley and stir to combine.
Put onions, mushrooms u0026 potatoes on the bottom of the crockpot. Place pork chops over the onions, mushrooms u0026 potatoes and then pour the soup mixture evenly over the top.
Turn slow cooker to high and cook for approximately 4 to 5 hours or low for 7 to 8 hours. Be sure and cook pork to recommend temperature 145 F to 160 F
